It started when I was a little girl and I get to re-live out my rainbow unicorn dreams every day, because I have two little girls who are as O B S E S S E D with unicorns as I am!

So, naturally, I wanted to make my girls a fun unicorn themed breakfast pudding (oh, who am I kidding? I wanted it!!!)
Even if you don’t want to make your own unicorn chia seed pudding (insert wink emoticon), here, you’ll find the recipe for my probiotic rich and gut soothing chia seeding pudding, which I’m sure will soon become your staple.
I love chia seeds so much because they pack such a mighty punch!
They are packed with healthy Omega 3’s, gluten free, sugar free and really are very satiating.
I eat this pudding everyday for brekkie (minus the unicorn colours!) and its my staple: warm in winter and cold in Summer.
Here’s your recipe:
RAINBOW UNICORN CHAI SEED PUDDING
1 cup chia seeds
1 litre coconut or almond milk (or any kind of milk you love)
1 tablespoon honey
1 teaspoon vanilla
Whisk all ingredients together in a large jug/ 2 litre size glass container and allow it to sit overnight or around 2 hours in the fridge.
The chia seeds will swell up, so you need to give them time to do this.
Once they have swelled, you can divide up the mix into 5 different pots.
Then add these colours to each pot:
Around ½ tsp matcha powder
Around ½ tsp beetroot powder
Around ½ tsp butterfly blue powder
Around ½ tsp cacao powder
Once the colours are to your liking, it’s time to layer them on top of each other.
Top it off with coconut cream kefir for a delicious probiotic hit.
