BEAUTY PANTRY: Cloud Whipped Ricotta with Collagen and Golden Tomatoes

 

Ricotta has a quiet versatility that makes it feel at once rustic and refined. Whipped until smooth and cloud-like, it becomes a canvas for flavour. Paired with slow-roasted cherry tomatoes, garlic, and the brightness of lemon, it transforms into something that feels effortless yet elevated.


This is a dish that belongs at the centre of the table. It works as an elegant starter, a share plate for long afternoons, or a simple ritual you come back to when you want food that feels both nourishing and beautiful.

The Ingredients

  • 1 punnet cherry tomatoes
  • 1 garlic bulb
  • Extra virgin olive oil (I love Golden Groves)
  • Sea salt
  • Cracked black pepper
  • 2–3 sprigs thyme
  • 1 lemon, juiced and zested
  • 1 tub ricotta
  • 2 tablespoons Miracle Collagen
  • Fresh basil, to serve

 



The Method

Preheat oven to 190°C. Place the cherry tomatoes and whole garlic bulb on a baking tray. Drizzle with olive oil, season with sea salt and cracked black pepper, and roast for 25 to 30 minutes until blistered and golden.





In a stand mixer, combine ricotta, thyme, lemon juice, lemon zest, a drizzle of olive oil, sea salt, cracked pepper, and Miracle Collagen. Whip for 2 to 3 minutes until smooth and airy.










Spread the whipped ricotta onto a serving dish and create soft swirls with the back of a spoon. Add the roasted tomatoes, squeeze out a few cloves of garlic over the top, and finish with basil, olive oil, extra lemon, and seasoning.
