Sara Loura's Miracle Collagen Carrot Cake

We love to take dessert recommendations from fearless, food-loving, women like us, who dream of Miracle Collagen infused cakes and desserts on a rainy (or sunny) day (or any other kind of day, if we’re honest).

So when International Model, Londoner and Perth-based model Sara Loura let us in on her mouth-watering Collagen Carrot Cake extraordinaire - we couldn't resist - we simply had to share!

Here’s how to enjoy your very own slice (or multiple slices, if you can't resist either):

 

 

Ingredients 

160g rapadura sugar
200ml macadamia oil 
200g carrots, grated 
3 eggs, room temperature
1 heaped tsp. cinnamon
1 tsp. cardamom 
240g spelt flour
2 tsp Miracle Collagen
1 tsp.baking powder
1 tsp. baking soda
1/2 tsp. sea salt 
60-70g sultanas, lightly coated in flour
50g walnuts or pecans, chopped
pinch of freshly grated nutmeg *optional

     

    Method

    Preheat oven to 200*C. Beat the oil and sugar together in a large bowl.  Slowly add each egg followed by the carrots while continually beating. Mix in the flour, spices, baking powder, baking soda and salt. Add the Imbibe Collagen Powder. Make sure all ingredients are mixed very well together before mixing in the chopped nuts and sultanas. 

    Pour mixture into a lined cake tin (22cm) and bake for about 40 minutes. Depending on your oven you may need to cover the cake with aluminium foil around the 30 minute mark to prevent the cake from taking on too much colour.
